What You’ll Need

  • Mixing bowl
  • Rubber spatula
  • Tea strainer (small fine-mesh sieve)

Directions

1. Line the entire baking sheet with parchment paper and preheat the oven to 170°C (340°F).

2. Chop the plain roasted peanuts, skins and all.

3. Melt the butter in the bowl, add the egg and sugar, and mix well with the rubber spatula.

4. Sift the flour through the tea strainer into the mixture from step 3 a little at a time, so no lumps form.

5. Add the peanut powder to the mixture from step 3 in 2 to 3 batches, mixing with the rubber spatula.

6. Add the chopped peanuts to the mixture from step 3 and mix them in evenly, taking care not to rub off the skins.

7. The finished dough will be fairly stiff. Transfer it to the baking sheet and use the rubber spatula to spread it out thinly, about 8 mm thick. (If it’s hard to spread with the spatula, cover the dough with plastic wrap and press it out with your palms. This also makes it easier to judge the thickness.)

8. Bake in the 170°C (340°F) oven for 20 minutes.

9. Take it out of the oven and, while it’s still warm, cut it into bite-size pieces with a knife.

10. Once they’ve cooled and turned crisp, they’re ready.

They’re made with only a little sugar, but the rich flavor of the peanuts keeps them delicious.
